Ingredients:
makes about three 12 ounce jars
3/4 cup dried Elderberries
3 1/2 cups filtered water
1 tablespoon dry ginger or 2 T fresh ginger
1/2 teaspoon ground cloves
1 teaspoon cinnamon
1 1/2 teaspoons echinecea (another immune booster)
1 tablespoon broken rosehips (source vit. C)
Place all ingredients in a medium sauce pan. Simmer on low for 45 minutes. Strain.
For shelf stable recipe:
Return to pan and add:
2 1/2 cups of sugar
1/3 cup organic lemon juice
Simmer till sugar is completely dissolved; about 5 minutes. Pour into sterilized jars and process for 10 minutes. Check seal. If not sealed refrigerate. If sealed store for up to 1 year. Refrigerate once opened.
With Honey recipe:
Return to pan. Add 1 cup of raw honey. Warm (DO NOT BOIL) until honey is incorporated. Once cooled pour into jar. Refrigerate immediately.
